Fruit Cocktail Cake
This is an extremely rich cake, and it is recommended to be cut into 1 1/2" cubes for a serving size. Anything larger than that, and your crowd may have trouble consuming the slice.
Ingredients
2 cups flour1 1/2 cup sugar
1 teaspoon salt
1 teaspoon cinnamon
2 teaspoons baking soda
3 eggs, beaten
1/2 cup butter, melted
1 can fruit cocktail
1 cup pecans, chopped
1/2 cup brown sugar
1 can Evaporated Milk
3/4 cup sugar
1/2 cup butter
1 teaspoon vanilla extract
Instructions
Preheat oven to 350 F and grease and flour a 9x13-inch baking pan. Combine flour, sugar, salt, cinnamon, and baking soda in a large mixing bowl. Add eggs, butter, and fruit cocktail. Pour the cake batter into the prepared pan. Sprinkle brown sugar and pecans on top of the batter. Bake for 30 to 40 minutes or until the cake tests done.For glaze:
In a medium saucepan, combine milk, sugar, butter, and vanilla extract, stirring over medium heat until boiling. Boil for approximately 1 minute and spread over the cake, and let cool. Makes 48 servings
