Ugly Duckling Pudding Cake
Ingredients
1 package yellow cake mix
1 package lemon instant pudding mix
16 ounce can fruit cocktail, with syrup
1 cup coconut
4 eggs
1/4 cup vegetable oil
1/2 cup brown sugar
1/2 cup pecans, chopped
1/2 cup butter
1/2 cup sugar
1/2 cup evaporated milk
1 1/3 cup coconut
Instructions
Preheat oven to 325 F. For cake, blend cake mix, pudding mix, fruit cocktail, coconut, eggs, and oil in a large mixer bowl. Beat 4 minutes at medium speed. Pour into a greased and floured 9x13-inch metal baking pan. Sprinkle with brown sugar and pecans. Bake for 45 minutes. Do not underbake, and cool in the pan for 15 minutes. For glaze, combine butter, sugar, and evaporated milk in a medium saucepan and bring to a boil. Boil for 2 minutes, remove from heat, and stir in coconut. Spoon hot glaze over warm cake. Makes 24 servings.
