Cookie Icing
Ingredients
3 cups confectioner's sugar
1/2 teaspoon vanilla extract
2 teaspoons light corn syrup
4.5 - 5 tablespoons water at room temperature
pinch salt
Instructions
Using a fork, stir the sugar, vanilla, corn syrup, 4.5 tablespoons of water, and salt together in a medium bowl. It will be extremely thick and almost impossible to stir. Switch to a whisk and add 1/2 tablespoon water. If you lift the whisk and let the icing drizzle back into the bowl, the ribbon will hold shape for a few seconds before melting back into the icing. That is when you know it is the right consistency. If it is too thick, add water or too thin, add sugar. If you want to color the icing, add 1 to 2 drops first and stir it in. Add more if needed, but it will darken once dried. This makes enough to ice 2 dozen cookies, and they take 24 hours to dry completely.
