Brown Sugar - can harden but is still good. To soften - Microwave Method: place the hardened brown sugar in a microwave-safe bowl. Cover sugar with two damp paper towels. Tightly cover bowl with plastic wrap, Heat in microwave on HIGH at 30-second intervals until softened. (Microwaves vary; cooking time may need adjustment.) Divide sugar with fork (sugar will be hot); stir. Use immediately.
Overnight Softening Method: Place the hardened brown sugar in a bowl. Cover sugar with two damp paper towels. Cover bowl tightly with aluminum foil or plastic wrap Let stand overnight at room temperature. Divide sugar with fork; stir. Store in refrigerator.

To make sour milk, you can combine milk with lemon juice or vinegar and let it sit until it thickens and curdles:
Add 1 tablespoon of lemon juice or vinegar to 1 cup of milk
Stir the mixture
Let it sit for 5–15 minutes, or until it thickens or curdles
If you want to use sour milk within a couple of days, you can cover it with a lid and refrigerate it. Before using, make sure to stir or shake it well.
Milk that has gone sour on its own is spoiled and should not be used
